Vegetable Frittata

Preheat oven to 350 degrees F.

Slice potatoes into ¼-inch rounds.  Form single layer of potatoes on bottom of slightly oiled 8 x 8-inch baking dish, and put aside.

Sauté onions over medium heat for 5 minutes or until onions are soft.

Add peppers and sauté for 1 minute.

Spread onion mixture evenly over potato layer.

In small bowl, beat eggs, milk, herbs, salt and pepper. Pour into baking dish and lightly sprinkle paprika over top.

Bake for 30 minutes or until eggs have set in the middle.

Serve with fresh fruit.

Makes 6 servings.

*Use vegetables in season – asparagus in the spring, spinach in the summer, carmelized onions in the Winter.

**Can use dried herbs instead of fresh – 1 tsp. each.
