Penne with Herbed Tomatoes and Tuna

In a large pot of boiling water, cook penne or macaroni until al dente (tender but firm); drain.

Meanwhile, in a heavy saucepan, heat oil over medium heat; cook onion and garlic for 5 minutes or until tender, stirring occasionally.

Add tomatoes and break up using back of spoon.

Stir in chicken or vegetable stock, oregano and simmer, uncovered, for 10 minutes.

Stir in tuna or chicken and simmer for 5 minutes.

Season with salt and pepper to taste; add parsley.

Toss pasta with tomato mixture and serve immediately.

Makes 4 servings

*Kamut pasta is wonderful and healthy.

**Chicken can be used in place of tuna.
