Curried Chicken

Cook the onion, garlic and pepper in the oil until onion is tender – about 3 minutes. Add the remaining ingredients, except the rice and cook over low heat for about 30 minutes.

Serve over the rice.

Makes 4 servings.

This recipe freezes well.
